Ingredients:

  • 500g gizzards
  • 1 medium onion
  • 4 garlic cloves
  • 1 bay leaf
  • Olive oil to taste
  • Salt to taste
  • 5cl white wine
  • Parsley to taste
  • 1 dessert spoon of Malcriado Chili Pepper Jam
  • 1 packet of tomato pulp

Preparation:

  1. Wash the gizzards well with cold water and remove any impurities.
  2. Prepare the marinade. In a bowl, combine the white wine, bay leaf, minced garlic, and a pinch of salt. Mix well and let the gizzards marinate for at least 1 hour. (Yes, patience pays off!)
  3. Chop the onion and sauté it in a pot with a drizzle of olive oil until golden and translucent.
  4. Action! Add the gizzards with the marinade to the sauté and cook over medium heat for 15 minutes, stirring occasionally.
  5. The Malcriado touch: Add a generous spoonful of Malcriado Chili Pepper Jam and fold it in well. Can you feel the aroma intensifying? Yeah, things are getting serious.
