Shrimp Ovos Rotos, by Roberto Fonseca

Servings: 2 People

Ingredients:

  • potatoes
  • 500g of shrimp
  • eggs
  • vegetable oil
  • garlic
  • black pepper
  • 1 onion
  • sweet paprika
  • whisky
  • fresh parsley
  • butter
  • mayonnaise
  • Malcriado Chilli Jam
  • crispy onions

Preparation:

  1. Peel the potatoes and cut them into thin sticks.
  2. Fry the potatoes in vegetable oil in a frying pan.
  3. Peel the shrimp.
  4. For the mayonnaise, add an egg and vegetable oil to a container and blend with an immersion blender. Add a clove of garlic, salt, and black pepper, and blend everything again.
  5. In another pan, add olive oil and a chopped onion.
  6. Add the chopped shrimp and season with sweet paprika and whisky.
  7. Flambé well (You need to practice this technique well).
  8. Add fresh parsley, a little vegetable oil, and two tablespoons of butter.
  9. Add Malcriado Chilli Jam to taste.
  10. In another pan, fry 3 eggs.
  11. To plate, place the fries at the base of the dish.
  12. Add the mayonnaise.
  13. Drizzle some of the shrimp sauce over the fries.
  14. Place the fried eggs on top.
  15. Place the shrimp over the eggs.
  16. Add crispy onions.
  17. More shrimp sauce.
  18. And chow down!!!!

Malcriado Tips:

Want more heat? Add Chilli Jam to taste!
Best paired with? A glass of wine or a craft beer.
